Generally, one should avoid using bedrolls in their colonies. Unless you're playing as a Lost Tribe, you will have access to proper beds immediately, compared to the research-required bedrolls.

However, bedrolls do serve a purpose for caravans - their low weight makes for easy transport, so once you arrive at your destination you'll have a functional place to rest without needing to build a thing.
