The genetics thing says it lists ALL genetics that have a positive effect on ghouls, but toxic resistance and comfortable temperatures aren't listed. Are they naturally immune? Do the genes that decrease pawn wealth, like staggeringly ugly, have any effect? The list seems incomplete but boasts of completeness.

You are correct. Ghouls are not naturally immune to toxins nor temperature.
Despite what that disclaimer says, it seems more a list of genes that benefit ghouls from a combat/maintenance POV rather than all possible benefits. I would argue that the temperature range thing is biome-dependant and the toxic resistance situational, but both are still beneficial (assuming the metabolic cost is offset somehow).
Regarding the pawn Market Value: My understanding is that it works, but not worth it for that reason alone. However, those genes also increase metabolic efficiency, so it does provide an additional benefit (however small) over the "no downsides" group.
