Geese will happily lay unfertilized eggs without a male bird.
A goose takes 18 days to become a juvenile, and a total of 18 days to reach adulthood.

Geese will regularly lay eggs if female, even if unfertilized, unlike other egg-laying livestock. Each egg has enough nutrition to replace the meat component in a fine meal. If you also have a male goose, he may fertilize eggs before a female goose lays them. These eggs will then hatch into a gosling, so long as it is left alone and does not experience extreme temperatures (Less than 0C, greater than 50C). Unfertilized eggs will never hatch. There is no difference between a fertilized and an unfertilized egg for the purpose of cooking.

Or they can be bred to start goose farming. Fertilized eggs will then hatch into a gosling, so long as it is left alone and the air temperature is greater than 0 and less than 50).

Geese are notable for having the highest reproductive rate of any animal in the game, at 1 egg every 1.6 days (compared 1 per 2 days for chickens), and like chickens will lay eggs even unfertilized.  This makes them the best farm animal for producing eggs by raw quantity per animal.  However, geese consume 29% more food than chickens but produce only 25% more eggs, so chickens are still superior for food nutrition to egg conversion ratio.  Note that both chickens and geese are at a substantial net calorie deficit when converting input food to egg nutrition (geese consume 0.72 nutrition per day, but only produce 0.157 nutrition worth of eggs per day, an efficiency of only 21.7%), so this should only be used to convert free-growing otherwise unusable vegetation like grass into egg nutrition, or to convert vegetable matter into meat nutrition in an environment where meat is otherwise difficult to come by (ex. icy biomes).

Note that if the goal is to convert vegetable matter into animal products (for example, to fund lavish meals), cows are substantially superior, having a base raw efficiency of 66.18%, which 3 times that of geese, and high enough to be nutrition-positive if cooked into most (but not all) meal types.

Goose

A domesticated bird kept by humans as poultry for it's eggs and meat. Lays eggs very often, however they take a long time to hatch.

A Goose is a domesticated, medium-sized waterfowl, known for its large eggs and belligerent nature. Like all farm animals geese cannot be found in the wild, and must be purchased from traders.

Summary

Geese will happily lay unfertilized eggs without a male bird.

Or they can be bred to start goose farming. Fertilized eggs will then hatch into a gosling, so long as it is left alone and the air temperature is greater than 0 °C (32 °F) and less than 50 °C (122 °F)).

There is no difference between a fertilized and an unfertilized egg for the purpose of cooking.

Analysis

A goose takes 7.2 days to become a juvenile, and a total of 12 days to reach adulthood. The geese reproduction rate (eggs per clutch/egg laying interval) is 0.5 offspring per day.

When slaughtered, a goose yields 17 bird meat as a gosling; 42 as a juvenile; or 84 as an adult. Also a goose yields 6 leather as a gosling; 18 as a juvenile; or 26 as an adult. By slaughtering the geese rather than eating the unhatched fertilised egg, more nutrition is gained (0.85 rather than 0.5).

An adult goose consumes 0.45 nutrition per day, and produces 0.25 nutrition of eggs each day, resulting in a nutrition efficiency of 0.558 when unfertilised eggs are eaten.

When new-born goslings are slaughtered, an always-fertilised female goose produces 0.43 nutrition per day, resulting in a nutrition efficiency of 0.949 for the female goose alone, or 0.759 when accounting for the 4:1 female:male ratio needed to achieve a good fertilisation rate.

As a gosling grows into adulthood it will consume 2.9 nutrition in total, and will yield 3.35 more nutrition when slaughtered than it would as a baby. This means that the nutrition efficiency of a growing gosling is 1.154.

*As of version 1.1.2610, all animals can be tamed. The percentage of likelihood of success depends on factors such as the Animals Wildness Percentage, Pawn Handling Skill, and others. More information can be found on the animals page.
