This page gives an overview what you should make out of your leathers in order to sell it most profitable.
All calculations try to maximize the value per material. If ever two options are tied, the minimum work per silver is preferred. The cost and work of acquiring the material is ignored.
Since furniture can only be sold at 70% of it's market value as opposed to 100% for apparel it is generally not advisable to build any of it for trading and it is therefore not calculated separately.
Terminology
Silver per Leather is the Market Value multiplied with the Sell Price Multiplier divided by the amount of leather.
Market Value Cap: The market value of an item with a quality above normal is capped. The cap becomes relevant for all items that have (at normal quality) a higher market value than:

Base Game
General
As you can see in Table A the duster has the highest Silver per Thrumbofur ratio of all base game items. This holds true for all leathers.
Thrumbofur and Inspired Creativity
If you use Thrumbofur in combination with inspired creativity however, this is dependent on the crafting skill level. This is due to the high value of thrumbofur which means that the value of the crafted items is capped for legendary items.
As you can see in Table B of all leathers only items crafted with thrumbofur reach this cap.
The relative profitability therefore changes and it is worth checking the next best option which are: hood, parka, jacket and bowler hat (in this order). Note that hoods were only introduced in 1.3. We are going to ignore parkas, since their value is capped the same way as for dusters. Thrumbofur jackets are also affected by the cap, but since they require less leather, the cap is not that severe.

It's not really visible in the graph but up to level 2 the duster remains the best option. After that the hood is most profitable. The duster remains the second best choice up to level 5. From level 6 the bowler hat is the second best option.
It is however questionable if you shouldn't rather use the inspiration creativity on something more useful, like crafting a good weapon.
Royalty DLC
As you can see in Table A corset and formal vest are tied with the highest Silver per Thrumbofur ratio of all items including the Royalty DLC. This holds true for all leathers.
As you can see in Table C corsets and formal vests made of all leathers are not affected by the market value cap. They therefore remain the most profitable item regardless of crafting skill level or inspiration.
Ideology DLC
General
The Ideology DLC doesn't provide any more profitable options. Therefore in combination with only the base game the duster remains the most profitable option. If used together with the Royalty DLC corset and formal vest remain the most profitable options.
It adds the production specialist role however, which changes the affects of the market value cap if thrumbofur is used. This becomes only relevant without the Royalty DLC.
Thrumbofur and Production Specialist Role
Hardly visible in the graph the duster remains the most profitable option until crafting level 9. The hood becomes the most profitable option from level 9 on. The duster remains the second best choice up to level 12. From level 13 the bowler hat is the second best option.
